The gear teeth on 7 speed are obviously wider, than a 10 speed group set, so the 10 speed chain will be narrower, might work, but it might catch, & cause unnecessary wear

Depending on the amount of shim required, I've cut up tins beer tins etc with snips, if you have a micrometer its surprising the different thicknesses you can find, & normally make them much longer.
