Is it weird that during the installation I counted the perforation holes on each side of my bar wraps to make sure they were exactly even?

Honestly I this Fizik tape was pretty crappy, luckily they're risers so I have another roll from the pack that I'm going to have my LBS install with bar ends and my Mavics

1) Buy new bar tape. Cinelli cork tape is common and not too pricey. You may need more than one package; results vary.
2) Remove Fizik tape. Residue can be removed using Goo-Gone, but make sure the Goo-Gone is thereafter removed and the bars are left clean.
3) Starting at one end and working clockwise around, completely wrap your computer keyboard in Cinelli cork tape. It is important to go clockwise. Ensure that the keys cannot be pressed.
3a) If you also use your phone to post here, you may need the second package of tape to wrap it. Phones are always wrapped counter-clockwise (this can be a major faux-pas, bike messengers will spot it instantly).
4) Use the included finishing tape to secure your wrap. Some prefer electrical tape.

Wrap the right handlebar clockwise so the tape is going forward over the top of the bar.

Wrap the left handlebar counterclockwise so the tape is going forward over the top of the bar.

It appears the left bar is wrapped backwards. Your hand will unwrap the tape over time.

And since you're just doing risers, you have a lot of extra tape so you can overlap it a lot more.

I recommend barend plugs to complete the job.

literally the worst wrap job I've ever seen.

Bar plugs to prevent scientific core sampling when you crash.

OP: Do you mind me asking why your saddle to bar drop is so extreme when you're using straightish bars? It seems counter intuitive to me.

because everyone thinks you're supposed to "slam that stem" instead of having a properly fitting bike.

Is there something wrong with normal grips?? Why the tape?

For the same reason he didn't remove those dumb decals (or his tires) before stripping the finish off his rims.

My frame is a size too small so I'm making it work with a high seat and 120mm stem. I don't really know how to adjust it any other way without getting a new frame.

Maybe you shouldn't have cut so much off your steerer to begin with.

There's plenty of stems with extreme rise rather than forward reach...

You are having the LBS install your new wheels? All you need is one of these and the ability to know the difference between clockwise and counterclockwise. Literally. Nothing else.
