Shimano brake compatibility

Upgrading the mechanical discs to hydraulics - looking at GRX 810 shifter/levers combined with BR-M7120 calipers. But the current Shimano compatibility doc doesn't even show this combo.

So the last time I posted, I was looking to restomod my old Santa Noventa with hydraulic discs.

My framebuilder friend was up for modifying the rear triangle, and I bought a disc brake tandem...
