I doubt I use more than 3 or 4 cogs of the cassette when I'm on the trainer. In fact, I had to get a cheap cassette because I was wearing out the middle cogs.

I guess you’re right. I only searched TP for segments of 1hr+. Now if I search for VO2 max intervals, there are 1200kcal/hr. But by definition, those efforts are not sustainable.
