Using narrower tires from a 27.5 x 2.6" factory setup?

I'm not sure if the 30mm wheels on my 2020 Giant Fathom can support narrower tires, but I'd love to have two tire sets: one for singletrack (the 2.6s that come on it), and one for city/rail trail...
