I want to upgrade to hydraulics but I am 100% sure I wont be able to do on my own/ How much shall I expect to pay for mechanic to do it for me.

Sorry for what happened to you. But maybe better not to place order for an ebike which need to be built. For custom bikes things can go south easily.
