Yes, you can make a Brooks clamp work for any two-rail saddle. It doesn't matter if the rails aren't spaced exactly right or if they aren't parallel; they are springs. They will do what you want then...

I don't think your original derailleur was indexed. The indexing, if any, was in the shifter. At any rate a derailleur made for 6 speeds will certainly work for 5, and (with the right shifter)...
