v-brakes shouldn't be the hardest things to find. You can order a pair of Campy mini v's through QBP.
Cantilevers are a different story...

they're level hubs. I've never used it on the track, only on the street.
I have another pair of wheels that I use for the track.
1.2's are dreamy rims, though. Easy to build with!
