Not sure how mechanics do it, but don't be intimidated by the internal routing if you're sure the cable snapped.

You can tie/tape/secure a long string to the derailleur end and pull the cable out...

Depends on length of your ride. I wear base layer, wool socks, lobster claw gloves, baclava. Makes you feel alive to ride in the cold.
