It is the larger steps that make the difference for me. You can have closer ratio's with the 9 speed and 9 speed chains are holding up very well for me.

Keep your pedals in a neutral position when the wheel has to be turned so much that it would hit.

It becomes automatic after a while.

With a trike, I'd park it in a parking space as close to the front door as possible. Easy to keep an eye on and maybe the manager will say something about taking up a parking space thereby opening...

Seperate shifter and brake lever would be the way to go. Standard levers for non-v brakes are easy to find. I have several bikes set up that way.
