I agree with the suggestions of using SPD pedals...

I agree with the suggestions of using SPD pedals adjusted loosely. However, a word of caution: setting them too loose will make them hard to clip in to.

Can anyone recommend a headrest for the Bacchetta recurve seat besides the ADEM?

While I'm sure it's a fine headrest, as a retired G.I. it's beyond my price range.
