Flats are the way to go as far as I'm concerned. I have used and can highly recommend Crank Bros Stamps, Shimano Saints, and Wellgo MG-1s. All great pedals, the Wellgos the most budget friendly.

That rack is massive. You might want some wider bars than the Porter bars if you're going to load that thing up. Cool project.

I figured those were braze-on centerpull studs. If they were canti studs the tire would hit that bridge. Super cool. Those brakes are going to be so smooth.
