I'd think about a cyclocross bike plus a 2nd pair of lighter narrow-tire wheels for the speedy road rides. Cyclocross bikes are pretty close to road bikes though with wider tires for dirt/mud roads....

Congrats, looks like a fun bike. Actually the Quick Speed 2 doesn't seem seem that clunky/heavy but the Exploit has drop bars & AFAIK hydraulic brakes which should be nice for those long descents.

I use Crank Brothers Double Shot pedals on both touring bikes. The flat side has nubs vs pins so it is kind even to soft flip-flop soles; OTOH not super-grippy...I don't hop off curbs for instance.
