There is a difference in feel between 2000 and fuji but nothing very significant. The frames weight about the same. Fuji has full carbon fork, but it is not a problem to get one for 2000....

I think if I would bocome a WW, than CAAD7 would be a better starting point. BTW..what is the wheelset you have?

I do not think there is any frame, that meets all safety standards weights 850 gramms.

It can be 150g lighter, but not a pound... Well, full carbon...
