Of course, you can probably get an 8 or 9-speed cassette on that hub, too, so more options open up.

I could see why. Most of those early MTBs were really heavy. By 1995 you could get a 25 lb. bike for about $750 and those were way more racey angles so those from that era tend to be more sprightly.

It's usually the opposite for me. Shorter stem means more wheel turn for the same amount of bar movement. Shorter stem often means less weight on front wheel, which can "quicken" steering.
