The good thing is, new 2021 bikes are starting to trickle into shops. My shop has received 150ish bikes in the past 2 weeks. I'm sure the bike shortage is close to being over in the US.

Using bad tires with stiff casings(like Gatorskins) will definitely slow you down. If thorn punctures are your main source of flats. tubeless is going to be smoother, and likely faster.

I was able to mount a tubeless 28mm GP5000 without using a lever, but the owner of the wheelset needed to use a lever. The 28mm Schwalbe Pro 1 addix went on without using a lever.

If the OP rides on less than perfect roads, wide tires will make fast riding more comfortable, and could be less fatiguing. Less fatigue can allow a rider to go faster, or longer.

Next upgrade is Di2 for my mountain bike. Luckily they don't have XT 1x12 Di2 yet. .

BTW, Shimano max cog ratings are usually a little on the conservative side.
