I took an old set of XTR cranks for my single speed to a local chrome shop. They had the polishing wheels and compounds to take off the anodizing and create a mirror finish.

You can't go wrong with I9 hubs. I have two sets of hydras laced up to ENVE rims. I can swap wheelsets and not even touch the rear derailleur.
