I'm also a fat bike newbie but just picked up a 2021 Trek Farley 5 and love it. It ticks all the boxes at a reasonable price. Dropper, decent studdable tires, relatively light aluminum frame, etc....

I ultimately bought the derby with polarized lenses and could not be happier. For the trial, I had the panhead, derby, and aspen but the derby made the best seal all around. Fit will vary of course....
