on occasion my son likes to ride a loop around the park which is fine crushed compact gravel but most of my riding will be on the road.
#1 and #2. Total preference. If this will be a commuter, stick with normal shoes (think keen sandals) and flat pedals with grip (studs)
#3. Dont go thinner. No need. Go to 35mm if you can fit that on your bike and you will prefer the ride more with very very little speed drop.
