For Yukon golds I like to dice 'en into 3/8" cubes, boil 'til mostly done, then toss in a big skillet with equal parts bell peppers of various colours and onion (sweets or whites preferably), plus garlic, salt, and pepper.
Like others here I also love the rosemary action. We are caretakers of the mother of all rosemary plants, so we'll never run out...
