This is tempting... Life is definitely too short.
I rode Lisbon to Girona a few years ago and was amazing but I also stayed away from the coast. My routes generally avoid main tourist areas especially coast roads. My route stayed on quiet secondary roads. Lisbon, Madrid, Zaragoza ending in Girona avoiding Barcelona.
