I've been taking Wednesdays as my only off day each week, to do my strength/weight routine. A little bit of everything - upper, core, legs. Just to stay healthy and strong overall. I introduced glute work a couple years ago when I was having some knee problems and it seemed to work wonders for my tracking and overall form on the bike.
What do you do that allows you to take off on Wednesdays?
