if it is a 1975 Olympic (and I Dont know what the model name is for sure), what type tubing is it most likely made from. I’d like to order a tubing decal with some others.

And I have decided to go with shimano 600 full group with either 6 or 7 rear. But I do have one question for the experts out there. I’d like to run a vintage looking tapered crank and rings. Will they work ok with early 600 shimano derailleurs?

With simple friction if the bcd is correct you should be fine one can correct 2mm or so with washers if needed.
