Thanks guys, some options I've been looking at are in the 35-38mm range, so it looks like I'd be ok with those. (my biggest problem now is finding road-friendly tires, in the sizes I need, that don;t cost an arm and a leg. Some sizes, deals are often easy to find, but in a 700/29" x 40+, most of what I like is sold out, or expensive as hell! )
