I've got a pair of R45s which pair perfectly with 23 rear / 25 front. It wouldn't have hurt to have gone deeper in the rear, front is perfect at 45mm though, very much rideable even when it's quite windy.
Light seems like a great option for a lower cost build, but if you have $2500 burning a hole in your pocket I'm not sure why you wouldn't go with a name brand wheel that comes with a local dealer network, a bunch of wind tunnel testing, lifetime warranty, etc.
