You can put whatever rims you like on the Campagnolo hubs as long as the number of spokes matches the number of holes drilled in them! Unless if there is some kind of technical issue caused by the mixing of components (such as putting a rear derailleur on the wrong hanger or fitting the wrong sized seat post or not having long enough reach on some brake calipers) then you're welcome to use whatever you like!

It is very hard to offer advice to you without knowing the year your frame set was manufactured, and what priorities you have with the build. Are you trying to only use components that were available when your frame set was new, or do you want to have a solid climbing bike, or one that will be comfortable all day, etc?
