I have not actually done a tour on the Eastern Shore, but have ridden, sailed, and otherwise spent a lot of time there.

I'd second St Michaels and the Crab Claw as a stop. The Oxford Ferry may be a nice option on the way there. The Maritime Museum is a good one if you have any interest in that kind of thing. We used to do day rides there, usually a loop including the ferry and lunch at the Crab Claw. We also used St Michaels as a sailing destination when we had a sailboat in the Chesapeake Bay. Lots of good times there. Some of our nicer memories of Maryland (we are in Tallahassee, FL these days).

There are also lots of other quicker lunch stops if you want to just grab a sandwich or something. St Michaels is a touristy town so if you are in to browsing little shops there are dozens of those.

On the weekends you may be able to hit some church chicken barbecue dinners around the eastern shore.
