Eat some fruit when you're done riding. Can't help you with the energy issue, that comes with time and conditioning but keep at it!
I work weekdays and since I’m on my feet a good portion of the time I’m usually too drained to do any extended rides after work so I *try* to do an extended ride on the weekend with shorter ~30min interval rides during the week. Haven’t been doing this as much due to the snow here but since it’s getting warmer and there’s more daylight I’m trying to get back into it
