For extra credit, how about building wheels with tubeless (no outer spoke holes) rims? One has to drop the nipples into the valve hole & maneuver them thru the spoke holes. Apparently it's not too hard to do but time-consuming, pros charge $10-$50 extra per wheel.
Anyway, with LBS's being a bit backed up with mech work, building one's own wheels might save time vs waiting for a pro to build.
