More fork rake (lower trail) makes slightly easier steering and less tire flop. I have never felt like my low-trail bikes were unstable. Others don't like the responsiveness, it really depends on what you are used to. Most gravel bikes have slack head tubes, so they have plenty of trail. I think the main thing that you will notice is that it isn't quite as unpleasant to ride out of the saddle. I'm glad fork companies are coming to the realization that 45mm rake isn't enough for a gravel bike.
