Shimano 9 speed Deore derailleurs can be mixed with most Shimano 10 speed STI brifters except Tiagra 4700 ten speed. Any 105 or Ultegra 10 speed shifters will work with the Deore RD-M591 rear derailleur. The M591 can take a 36 tooth cog on a cassette and works great on 10 speed systems.

Deore 10 speed is not compatible with Shimano road shifters, including any Tiagra, 105, Ultegra...

Going with mechanical disc brakes will save you money. Also consider the TRP HY/DR hybrid mechanical/hydraulic brakes if you want the benefits of hydraulic disc brakes without the cost and installation headaches.

Be sure to invest in tubeless rims and tires. You will regret using tubes on gravel.
