Agreed that Shimano Arabesque 600 is pretty stuff, and that Campy may also be a better fit for that bike in the long haul. I’d ride it as-is after an overhaul then slowly build a pile of whatever parts fit your tastes. Wait for deals. I don’t know how things are looking now, but that general approach has usually worked out for me. Of course, keep an eye out (or notifications set for) misspellings of parts. Plus, sometimes a bit more expensive is still a deal if it gets the job done and condition is good. If you like the Gran Sport stuff run with it. I don’t have any first hand experience, so no recommendations either way from me. 600 might be a bit more enjoyable depending on the condition between the two. New chain (maybe 9sp), cables, housing, pads, tape, saddle to fit, etc. Change the gearing for your area if needed.
