Motorpacing is the only way to feel how the bike is at speed, while your not in the wind you still get the feel of what fast is and how your bike reacts to inputs from you, I can also guarantee you that you would not be able to repeat passing drills with a human in front as many times as you can with a motor.
That being said, the motor is only a tool and not the only tool needed to ride at speed.
