The problem is that my tastes are pretty eclectic. For instance, I consider my own roadbike to be pretty classy although plenty of others may not simply because it's CF with a lot of modern bling-bling parts. I also consider plenty of lugged steel frames to be classy. I find a bunch of MTBs to be classy too. For me, classiness has to be put into a certain context and a lot of times I find that each bike has to be judged on a case-by-case basis.
