As far as the rims and spokes, if it's built right, they'll last forever.
The bigger problem is likely to be the grease in the hubs will dry out if you leave them sitting for a very long time. After several years, you might want to repack the bearings (if possible) or drip a few drops of light oil into sealed bearings.
