Vintage 700C rims are always in demand and it's generally hard to find nice ones for a decent price. I declare rims "consumables", which allows me to buy new ones that look the part. How about Sun M-13 II rims? They look great and are not expensive, I just bought a pair for $74 shipped. Also, 27" rims look pretty much identical and vintage examples are much cheaper and easier to find. If you use 1¨ to 1-1/4¨ widths, tires are readily available.
