I think I've heard that once riding became more technical, QRs made it easier for folks to drop their saddles for rough sections where you'd want it out of the way. I don't remember what it's called, but there was a product that was basically a spring (so you could slam your seatpost down while riding the rough stuff, and then have it spring right back up to its previous height when you released the QR).
