I've done exactly this. 5600 series shifters, cgainset, front derailleur, and 5700 series rear derailleur with a 12-30 cassette. Shifts great. Better than when I was running an 11-28 cassette with the old 5600 series rear derailleur (which was technically one tooth larger than design spec).
