I believe the pissing while riding technique was invented by noted hermit and 1950's TDF champion Charley Gaul. The other riders didn't like Gaul much, so when he stopped to pee, instead of stopping the peleton in a gentlemanly manner and waiting for him to wiggle his weewee, as had been done in more gentlemanly times, the other riders sped past. By way of retaliation, or perhaps as a simply defensive manuever, Gaul invented the "pee while riding technique". How defensive (or offensive) exactly I cannot say.

There is also a famous story about Greg Lemond and a bout of runs... no one in the peleton wanted to be behind Greg that day.
