Very cool bike, I want a similar bike. This bike is more a lot more versatile than typical skinny high-pressure tire gravel bikes. I'd run it with Rocket Rons as a drop bar mountain bike and with 38mm tubeless road slicks on a second wheelset. I'm surprised you haven't set it up tubeless. I get punctures on nearly every ride but sealant does the job.
I change tires quite often and also change wheels between bikes (with tire change in the mix). I have some bikes setup tubeless where I know wheels/tire combo will stay on for a long time, like my Krampus rohloff build but I see no point in going tubeless on all my rides, I will go broke just buying valves, rim tape and sealant to do all of them :-).
