Maybe I'm crazy, but if that were mine I'd be very tempted to use Campagnolo Super Record from the early 80's.
Elegant, graceful, polished.
Won't take away from the frame details.
Not fussy.
Fewer cable housings.
I'd also use something like TB-14 polished box section rims with skinwalls.
