Shimano doesn't make "thumb" shifters any more- they haven't for more than 20 years. Their handlebar shifters are all under-bar "trigger" shifters which aren't real thumb shifters. (It's about bicycle parts vernacular. It can get confusing at times. )

I was thinking of the Velo-Orange shifter mounts and Dia-Compe ENE friction shifters, both available from Velo-Orange:

The frame is a Look KG381 and I would really love trigger (rapidfire stye) shifters.
I find them really satisfying to use!

So the Veloce Flat Bar shifters with a change to 11 speed cassette are my only alternative?
There is no way to use Sram or Shimano or some other brand that makes trigger shifters that would work with my older Chorus setup?

I am also willing to change more parts if necessary. But from what I gather starting to change the FD and BD setup to possibly MTB parts opens a whole new can of worms...
