So your rear hub is a Shimano circa '93 7 speed? The right 8 speed brifter won't work on the 7 speed cassette - different sprocket spacings.
When you say Tourney, you mean modern Tourney, right? I don't think you would have a problem with these, although it's not my area of expertise.
Another option is to track down some vintage 2 x 7 speed STI brifters like RSX.
