I grew up in an area where pickled beets and eggs were practically a staple. "Pinkled Eggs", we called them. So much more appetizing than the 'Eggs In Plasma' look of pickled eggs made without beets.
We maybe grew up in the same house. Oh wait. We called them red eggs. And still do, actually. My sisters still make them.
