I used to always ride with wide flat bars, or bmx bars. So I too found my first pair of bullhorns quite twitchy. Almost to the point of being scary at first. But after a few long rides I adjusted to them so much they're now my favorite bars. Ride them for a while, embrace the responsiveness for a month or so, then make a decision. Save your loot until then in case you need a new stem/lever etc.
