Just about any of the modern GPS units will allow you to customize how your screen layout(s) look via their companion phone app. If touch screen is a must, go with a Garmin but be prepared to spend some bucks. I use a Wahoo Bolt and have absolutely no complaints about it. There are quite a few companies that make GPS bike computers with a variable of options. It pretty much comes down to what you are willing to pay for what you really want (or absolutely think that you need).
