Several bikes with Campy Ergos and Canti brakes - Avid Shorty 6, Shorty Ultimate, and cheaper Tektro ? Onyx on my tourer. All work fine. After my first cross bike build many years ago in which the only way to stop my bike was high speed dismounts, I learned to use inline adjusters like Jagwires.

As far as tires for road and gravel, I like Gravel Kings, Challenge Strada Bianca (vulcanized 160 tpi version) measures at 35 mm and Challenge Paris Roubaix (vulcanized) measures at 28-29. All of those can be found on sale pretty regularly in the $30 range.
