The transformation of your health is great! It sounds like you are doing a great job with your keto diet as well. You have avoided many of the mistakes that so many people make.
Many people don't understand that the 80% fat ratio on a keto diet is a recommendation for being on a keto diet where you are trying to at least maintain or even increase your weight! Remember it was first introduced to help with seizures.
If you eat 80% weight and then reduce from say 3000 Calories to 1500 Calories, you will reduce the amount of fat you eat because you still need the same amount of protein. This means that percentage of protein will climb even though the amount of protein doesn't increase.

Age and 1000 other factors can influence fitness so it can be hard to predict what your experiences will be.
You might need to introduce a little bit of carbs on longer rides, but as you ride more, you should be able to handle progressively longer rides without needing to eat carbs.
