I used exactly the same stuff on the '84 Raleigh Sportif I rebuild to a commuter bike:
quill: Origin 8 classqiue, got the 180x60x26.0. I ended up cutting 2cm off the length after about 2 years to lower it though. YMMV.
brakes: tektro R559 long reach - slapped these on with zero issue. still going after 3000+ miles and almost 4 years. there is plenty of adjustability with the shoes and plenty of clearance.
