I ride fixed gear often and getting a shoelace caught in the chain is a big deal because you can't coast or stop pedaling.
I always use a double knot and then tuck the free loops under the laces. Works well for me.
My latest Giro shoes have an elastic lace holder near the middle of the tongue to tuck the laces into.
You might be able to get a shoe maker to add something like that for a few dollars.
